Recipe: Walnut, mandarin and rocket summer salad

In the lead up to summer we are celebrating the great Aussie barbecue. Let’s be honest; where would we be without it? One word. Lost.

Now come on, we’re all partial to a sausage in bread! Along with a couple of cold frothies, a few tunes on the outdoor jukebox (radio) and a group of great friends…

But it’s not just about that mouth-watering meat… Every great barbie requires a solid line up of sides, right?! Yep, I’m talkin’ about potato salad, coleslaw, garden salad, fresh bread, and condiments…

Oh, and the Pavlova that follows for dessert…

HOLD UP! Did you just say the “P” word?! Absolutely I did BUT that’s NOT why we are here today (although we might come back to this family favourite at a later date).

Salads are a huge part of the Aussie BBQ – and what’s not to love about them? They’re easy, relatively cheap to throw together and filled with plenty of good stuff (such as vegies, fruit and nuts).

So with summer on our doorstep, where better to start…

Walnut, mandarin and rocket summer salad

Prep time:  15 mins

Total time:  15 mins

Serves: 4

Ingredients
Salad
  • 1 bunch of fresh rocket
  • 2 mandarins, peeled and segmented
  • ½ cup walnuts, roughly chopped
  • ½ cup freshly shaved parmesan
Vinaigrette
  • 1 tbsp maple syrup (or can use honey or rice malt syrup)
  • 1 tbsp horseradish
  • 2 tbsp red wine vinegar
  • 2 ½ tbsp olive oil
  • 1 clove of garlic, crushed
Instructions
Vinaigrette
  1. If you’re away camping, place all ingredients in a tightly sealed jar and shake, shake, #ShakeItOff
  2. If you're at home – throw all ingredients into a kitchen whizz, blend sufficiently
Salad
  1. Place rocket in a large salad bowl; scatter with walnuts, mandarin segments and parmesan
Service is simple; once you’ve dressed the salad, you’re ready to go!

I just can’t let it go. The travel bug that is! I just can’t let it go. The travel bug that is!

It’s been radio silence over these past couple of years. We’ve been reflecting deeply. 
.
I’m proud to share, after 15 incredible years travelling the world filming our international TV travel series, we’re reimagining our PWG home. 
.
We’ve always shone the light on rich travel experiences, and more importantly the people behind them. I’m pleased to say we’re continuing to do exactly that, however, things will look a little different. 
.
This logo signals a new direction for PWG. ABL stands for Australian Bucket List, and over the weeks and months ahead you’re going to see us evolve and grow. Our core values, of course, will always remain the same. 
.
I look forward to continuing to share the journey. Like all travel experiences, it’s a hell of a lot richer when you’re surrounded by like-minded people.

I was lucky enough explore regional Victoria earli I was lucky enough explore regional Victoria earlier in the year (between lockdowns!), and tour the Goldfields with @big4holidayparks – Sure, I got my much-needed fix of the outdoors and was able to feed my insatiable curiosity as I explored the regions utterly fascinating history & culture, but it was sitting up at the old bar of family run Munari wines, just outside of Heathcote that got me.
.
 Chatting to the chief winemaker Adrian Munari, and his daughter India (over a lovely red, of course) I heard all about the historic sheep station that was established in 1871, and life on the property today. (I wonder how the farmers endured the pandemic in 1919?)  
 .
Here’s to a happy summer holiday for us all, of enjoying those ‘moments’, wherever we are.
